is there a how to on removing the stereo and surrounding wood panels.
And will a galant stereo adapter work for the legnum

A Galant stereo adapter lead for the ISO connections should work with a Legnum. (Unless anyone else can correct me :inquisiti ).
Thinking of it - have you an aftermarket stereo in there at the moment or is it a MMC double-DIN unit with screen?

There is a huge amount of information on here, although it's not always easy to find it! Apologies if you did it already, but the search function will usually find it, eventually. I reckon it's worth persevering as some of the irrelevent search results actually contain information you didn't realise you needed to know until then!
Aware of the search function did use it but wasnt thorough as i was mid way fitting the exhaust for my old man.
Seems simple enough, pretty much like my FTO.
Stereo is a single din unit, i'll pull it out tomorrow and have a look
