Well the JPNZ manual says 20Nm 120 degrees +120 degrees.
Not that I really understand what that means?

in english that means
tighten to 20 newton metres
then turn through 120 degrees
and then another 120 degrees.
does it mention anywhere about a rest period between actions??
if not i would allow 3-5 minutes between each action for the gasket to settle
oh and to add if the head tighteneing sequence involves angles this is usually an indication that the bolts are stretch bolts and MUST be replaced.

Yes, I'd tighten them all to 20Nm (in the correct order), rest a few mins, then tighten them all by 120 degrees, another rest, then tighten them all the final 120 degrees. Been a while since I've done a head gasket on anything though - but I assume you can apply the same 'order' to it: start at the centre bolt, working steadily outwards on each side alternately? Or is there a special sequence with these?

^^ You have it right, work from the centre out, though watching the mechanics at my old man's work do the head bolts on a few of these engines, I haven't seen any of them stop for a few minutes inbetween the 120 degree turns. I would imagine it would be better to do so though.

Will it matter if one lets go and you get a blown head gasket?
They've already been stretched during the installation. They are not designed to be tightened to 20Nm with two lots of further tightening again.
